Last winter, my mom served a really delicious salad that I’ve made several times since. My kids love it, and even my 20 month old will eat some of it (he usually just plays with the lettuce, but hopefully that will change).
While it’s great to use lettuce that’s fresh from the garden and apples picked right from the tree, I don’t have that option during wintertime in this cold climate. So, I use the next best thing; because even when lettuce comes in a bag or fruit comes from the supermarket instead of straight off the tree, it’s much better to eat them that way rather than eating processed junk. This salad is healthy and easy to make, as well as full of color, which is great for getting vital nutrients in the wintertime.
